This knife is used for making sure you get all the right cuts and filets without leaving anything on the bone. 56-58 Rockwell rating in hardness. Stainless steel molded dimpled handle for safe grip. High tech molybdenum/vanadium stainless steel blade. Narrow and curved shape to make filleting fish easy. Ceramic sharpening steel recommended.
