Powder-form sugar substitute used for producing sugar-free hard candies and for decorative sugar work.
Application: Isomalt absorbs very little water, so candies made from isomalt tend not to be sticky.
Isomalt does not get any coloration until reaching 190ºC / 375ºF.
Usage level: As per sugar.
